Thanks to some member suggestions - I gave this one a try and put it together using the etools recipe builder.
12 Breakfast quiches at 1.5pp each
5 eggs
3 egg whites
50g low fat ricotta
30g fetta cheese
12 medium sized mushrooms sliced
1/2 cup skim milk
200g frozen. spinach (thawed)
40 g shaved parmesan
In a mixing bowl combine all ingredients.
Making sure cheeses are broken up and mixed through.
Spray canola oil onto a 12 hole muffin tray
Spoon mixture evenly into the muffin tray
Cook in oven for about 20 -30 minutes @ 180degrees.
This turned out so well!
I think it would lovely with some roasted capsicum and eggplant also (maybe next time)
Now I have them in the fridge ready breakfast this week.
Def gonna give these a go!
