F&H Zucchini basil Soup



Ingredients:
1kg Zucchinis
1/4 olive oil

8 cloves garlic, crushed

1/4 cup packed basil leaves, chopped

3 cups chicken stock

1/4 cup flat leaf parsley

50g finely grated parmesan (if you choose


 ..........add 6pp)

Method:

Cut zucchini into small pieces. Heat oil, add zucchini, garlic, basil and a pinch of salt and cook over low heat for 10 minutes. Add chicken stock and simmer on a medium heat for 8-10 minutes. Blend in batches. Add cracked pepper to taste. Stir in parsley and parmesan.
Reheat on meduim, do not boil.
Serve immediately.
